Although I like granola all year round, it becomes my favorite snack in the fall and winter. When the weather gets colder, I usually choose warm cereals, and granola is an excellent topping for oatmeal. Some people prefer to sprinkle it on yogurt or eat it straight from the bag. In this article, I will walk you through the steps of dehydrating fruit and making granola.

I enjoy using dried strawberries and bananas as my choice of fruits. If you don't have a dehydrator, you can always use your oven instead. The key to is slicing the fruit thinly. I aim to cut them at 1/4 inch or smaller.

It takes me 7 hours to dehydrate strawberries and bananas, but not all dehydrators are equal in terms of efficiency or operation.

If you plan to use your stove, it's important to preheat it first.

Begin by placing parchment paper on your baking sheet or using a metal rack. Then, proceed to wash and slice your fruit.

To bake strawberries, preheat the oven to 210 degrees and bake for 3-4 hours. Make sure to turn the fruit over halfway through the baking process. Using a metal rack will speed up the drying time.

To bake bananas, preheat the oven to 175 degrees and bake for 6-12 hours. Make sure to turn the bananas over halfway through the baking time. Using a metal rack will help speed up the drying process.

To keep dried fruit fresh, store it in containers with lids like jars or plastic bowls. I prefer using ball jars as they suit my kitchen with open cabinets and I appreciate their appearance.

Granola

4 1/2 cups of rolled oats

1/2 cup of honey

1 cup of pecans - crushed

1/2 cup of melted coconut oil

1 tablespoon maple syrup

1 1/2 tablespoon of cinnamon

1/3 cup of dehydrated strawberries

1/3 cup of dried bananas

Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

In a medium bowl, mix rolled oats, pecans, and cinnamon together. Add melted coconut oil and stir well. Then, incorporate strawberries and bananas into the mixture.

Spread the mixture evenly on a prepared baking sheet.

After baking for 15 minutes, mix the ingredients and continue baking for another 15 minutes or until they turn golden brown.

Allow to cool before transferring to containers with a lid.

You can store granola at room temperature for a maximum of 2 to 3 weeks or in a freezer bag in the freezer for up to 3 months. Allow it to thaw for approximately 15 minutes before using it if taken out of the freezer.
