Homemade cranberry juice is highly preferred in my household. I prepare it throughout the year and even make it for my family. During our trip to Minnesota this year, I prepared 8 quart jars for my in-laws.

During the fall season, you have the opportunity to freeze cranberries so that you can enjoy homemade cranberry juice throughout the year.

There are many advantages to drinking cranberry juice, as it is packed with antioxidants and essential nutrients that promote a strong immune system and heart health, and it may also aid in preventing recurrent urinary tract infections. When consumed in moderation, cranberry juice can be a beneficial supplement to a well-rounded diet.

For my recepice you will need

You can utilize either fresh or frozen whole cranberries, amounting to 9 cups. There is no need to thaw the frozen cranberries; you can use them as they are.

3 cups of sugar

Tap or filter water

Water bath

Ensure that you have 6 quart-sized Ball jars that are sterilized and clean with new lids. You may reuse old bands, but make sure they are also clean.

Jar lifter

Make sure to wash the cranberries before placing them in the jars. You may be amazed by the amount of dirt, leaves, and some times small sticks can be found in the cranberry bags. Remember to discard any bruised or overly soft cranberries.

Grab your sterilized jars and add 1/2 cup of sugar into each jar.

Then, you should add 1 1/2 cups of whole cranberries to each jar.

Afterward, you should fill the jars with water, ensuring there is approximately one inch of headspace, and you have the option to use either filtered or tap water.

Whip off tops of jars and put on new sterilized lid and bans.

To start, fill your water bath with lukewarm water, ensuring that the water level is approximately 2 inches above the tops of the jars. Cover the water bath and heat it until it boils. Process the jars for 25 minutes.

Remove the water bath from the heat when the time is up and allow it to cool. You have the option to remove the lid of water bath if desired.

After approximately 20 minutes, place a dish towel on the counter and use a jar lifter to remove the jars from the water bath and onto the dish towel. Allow the jars to sit for 24 hours before moving them.

The majority of your sugar will remain at the bottom of the jar. It will take about 6 weeks before you can make use of it. During this period, the sugar will dissolve. Remember to label each jar with a date; I personally suggest marking the date of usability, but you can also use the creation date.

Important Notice: It is SAFE to consume even AFTER 12 MONTHS beyond the date on for canning. However, this guideline is applicable only to unopened bottles of cranberry juice. Once opened, the juice must be refrigerated and consumed within 2 weeks.

Signs of spoilage

Change in color, cloudiness, or fermented smell

We hope you all enjoy this cranberry recipe. If you and your family love this cranberry juice, remember to freeze cranberries in the fall so you can enjoy them all year round.
